Pumpkin Pie for Thanksgiving

   Hey! Tonight our family's coming here for thanksgiving!! My Uncle, Alan's cooking roasted potatoes and sweet potato casserole. My Aunt Kelly's cooking a green bean casserole. And WE'RE making Turkey with gravy and stuffing, mashed potato, roasted carrots and parsnips, and cranberry sauce.
   Here's the recipe for the pumpkin pie, including the crust!

~No Fail, Sour Cream Pastry Crust Recipe~

Prep time: 20 minutes

    Yield: Makes dough for two crusts, or one double crust

    And here's the pie!


Total Time: 3 hour 50 minutes
Cook: 1 hour 5 minutes
Yield: 1 9 inch pie or 5 5 inch mini pies

Pumpkin Roll Recipe

   Hey! Here's one of my favorite recipes: Pumpkin Roll!

Ingredients for the Roll 


  • 2/3 cup of pumpkin
  • 3 eggs
  • 3/4 cup flour
  • 1 cup of sugar
  • 1/2 tsp cloves
  • 1 tsp baking soda
  • 1 1/2 tsp cinnamon
  • Pecans (optional)
  • Powdered sugar


Instructions for the Roll


  1. Mix the pumpkin and eggs in a large bowl with a wooden spoon.
  2. In a separate bowl, mix in the flour, sugar, cloves, baking soda, and cinnamon. Then slowly mix both bowls together.
  3. Take wax paper and cover your jelly wel pan, spread the pumpkin mixture out.
  4. (Optional) Sprinkle finely grond pecans on top.
  5. Bake at 325` for 15-20 minutes (not gooey at touch), then take out of oven and cool for 5 minutes.
  6. Sprinkle powdered sugar on a flat surface and turn out the pumpkin roll.
  7. Spread the cream cheese frosting and roll the roll up-starting at the short side.
  8. Wrap in plastic wrap and put it in the freezer overnight.

Ingredients for the Icing

  • 1 cup icing sugar
  • 1 8oz cream cheese (soft)
  • 1 tsp vanilla
  • 2 tbsp butter

Instructions for the Icing

  1. Mix all of these in a bowl until creamy while the roll is cooking.

   Enjoy!
